Yum

A big hearty bowl of comfort, this ham and lentil soup can easily be made in your slow cooker, and offers both flavor and nutrition. Serve with a side of cornbread and you are sure to walk away satisfied!

For this ham and lentil soup, there is no need to soak your lentils. Dried lentils work perfectly (make sure you rinse and pick through them first), as your slow cooker will do the rest of the work for you. Just make sure you follow the cooking time! (10 hours on low, or 6 hours on high.)

This slow cooker ham and lentil soup is very filling thanks to the addition of potatoes. You can omit the potatoes if you want your ham and lentil soup a little lighter. Simply replace the potatoes with another can of diced tomatoes.

The first time I made this, the hubby said it needed more ham. So I doubled the ham, and reserved about 1 cup of the ham to fry it on the stovetop as a finishing touch.

That was a good move, and I would highly recommend you do the same! However, the soup is still perfectly wonderful if you don’t take this step.

So… I usually like to make my recipe write-ups just a wee bit more entertaining than this, but I gotta hurry my ass upppp here.

I woke up before my baby did this morning, and I’m trying to rush before he gets up for the day!

Because once my baby is awake… phwew! All productivity is out the window!

So just take my word for it, THIS HAM AND LENTIL SOUP IS REALLY FREAKING GOOD, OKAY. MAKE IT. IZ REAL GOOOOOD

And even if you have a wild child baby, you have time to make this complete meal in no time flat, thanks entirely to your crockpot! Ok thanks byeeeeee

Ham and Lentil Soup Ingredients:

Here are the ingredients you will need:

  • 1 cup dried brown or green lentils (rinsed, picked through)
  • 1 cup chopped carrots
  • 1 cup diced onion
  • 1 tbsp minced garlic
  • (2) 8 oz. pouches of diced, cooked ham
  • 1 bag (24 oz) petite yellow potatoes, halved
  • 1 can (8 oz) tomato sauce
  • 1 can (16 oz) diced tomatoes with juice (do not drain)
  • 32 oz chicken broth
  • 1 cup water
  • Dried herbs: thyme, oregano, basil, chili powder, and black pepper.
  • Optional: a dash of hot sauce and crushed red pepper flakes, if you want extra kick!
  • 1 bay leaf

You will also need a BIG OL’ SLOW COOKER. I’m using a 6 Quart Hamilton Beach slow cooker. If your slow cooker is smaller than 6 quarts, simply halve the recipe, so that everything fits.

Cook on high for 6 hours, or low for 10 hours.

OPTIONAL but recommended: reserve some of the ham and fry in skillet on stovetop. Save it for topping the soup later. YUM!

Serve with cornbread our sourdough bread!

Description

A big bowl of comfort, this ham and lentil soup can easily be made in your slow cooker, and offers both flavor and nutrition.

Scale

Ingredients

  • 1 cup dried brown or green lentils (rinsed, picked through)
  • 1 cup chopped carrots
  • 1 cup diced onion
  • 1 tbsp minced garlic
  • (2) 8 oz. pouches of diced, cooked ham
  • 1 bag (24 oz) petite yellow potatoes, halved
  • 1 can (8 oz) tomato sauce
  • 1 can (16 oz) diced tomatoes with juice (do not drain)
  • 32 oz chicken broth
  • 1 cup water
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/4 tsp chili powder
  • 1/4 tsp black pepper
  • 1 bay leaf
  • Optional: a dash of hot sauce and crushed red pepper flakes, if you want extra kick!

Instructions

  • Add all ingredients to a large slow cooker (minus 1 cup ham if reserving to fry on stovetop) and stir to combine.
  • Optional but highly recommended: Reserve 1 cup of ham and fry on stovetop. Add to top of soup for serving.
  • Stir all ingredients and put on High for 6 hours, or Low for 10 hours.
  • Remove bay leaf, add fried ham to top of soup (if you took that step), and serve!
  • Serve with cornbread or sourdough bread.

Notes

  • When reheating, thin the soup with a bit of water.
  • I used a 6-quart slow cooker.
  • I highly recommend reserving 1 cup of the ham, and frying it on the stovetop (for serving).
